Located in Envigado’s gastronomic “Buena Mesa” district lies Trifasico, a charming eatery which excels in mouthwatering chicharron and cross-regional Colombian cuisine.

Trifasico, so named for the pig tongue, ear and leg in which it specializes in, has been in business for over 30 years, but the true standout is the restaurant’s chicharron.
“The preparation of my famous chicharron is no science, we just choose excellent bacon – good quality and fleshy,” said the owner of Trifasico, Orlando Montes, who is referred to by some as “Mr Chicharron of Antioquia.”
The chicharron certainly doesn’t disappoint, and neither does the extensive menu, which is reflective of the subtle yet nuanced regional differences within Colombian cuisine. Each meal consists of a jaw-dropping portion of meat of various cuts and is accompanied by potatoes, beans, chorizo, plantains, arepa and avocado, promising to leave even the hungriest of customers satisfied.
“I came to visit a friend in Medellin and wanted to try something typical and my friend said this [Trifasico] is the best. It’s very good, but portions are very large – enough for three people,” said Colombian born New Yorker Felipe Hernandez
Meanwhile, the atmosphere of the restaurant is as cozy and pleasant as the portions are large, making you feel almost as if you’re dining in your own home. Montes is usually present in the restaurant, helping to prepare dishes, serving food and chatting with the customers. On the walls hang resturant reviews from newspapers and magazines, as well as pictures of well known Colombian figures, such as President Juan Sanuel Santos, who have visited the restuarant.
Almost every table is full during lunch hours, as both businessmen and families flock to the restaurant to spend leisurly time together and enjoy the food.
Montes’ eatery is one of the few restaurants in the Buena Mesa area which serves traditional cuisine. Many of the surrounding restaurants that have popped up in recent years provide more Americanized food, such as burgers, pizza and U.S. style Mexican.
The restaurant is open Monday to Saturday from 8AM to 12AM and is more crowded during lunch. Menu prices range from $10 to $20 a plate. The restaurant is situated on a beautiful tree-lined street, at Cl. 31sur 43a-68.
