Medellin’s Trifasico restaurant serves up a mean chicharron

Located in Envigado’s gastronomic “Buena Mesa” district lies Trifasico, a charming eatery which excels in mouthwatering chicharron and cross-regional Colombian cuisine.

Trifasico, so named for the pig tongue, ear and leg in which it specializes in, has been in business for over 30 years, but the true standout is the restaurant’s chicharron.

“The preparation of my famous chicharron is no science, we just choose excellent bacon – good quality and fleshy,” said the owner of Trifasico, Orlando Montes, who is referred to by some as “Mr Chicharron of Antioquia.”
